Rice with green peas


          Rice is one of the oldest grains known, with thousands of varieties. Most Indian cooking uses basmati rice. White rice is considered as refined grains. Use of organic white rice or brown rice is preferred because it contains vitamin A.


Ingredients

                1  cup Basmati rice (use organic rice or brown rice)

                2  tablespoons canola oil

                1  teaspoon cumin seeds

                ½ teaspoon turmeric powder (optional)

                ½ cup green peas

                1  tablespoon fresh coriander, chopped

                2  cups water and 2 tablespoons

                1  teaspoon ghee

 

    

                   1) Wash rice toughly 3-4 times or until the water comes out clear. 
            Set aside for 30 minutes.

                   2) In a medium sauce pan add oil over medium-low heat. Add cumin seeds and let them crackle for 2 minutes. Add 2 tablespoons of salt and turmeric powder.

                   3) Add water and cover the pan, let cook for 5-7 minutes. Remove heat, stir well, cover until remaining water has been absorbed

                   4) Garnish with chopped coriander, serve with daal and 1 teaspoon of ghee.


   

Home Made Yogurt


         Use cow milk for the preparation of yogurt. It increases appetite, digestion and is also very nutritious 


Ingredients

            2 cups 2% milk

               2 table spoon yogurt starter

 



                  1) Boil the milk over medium heat.

                  2) Let it cool down to room temperature

                  3) Place the milk into a glass casserole dish, stir in yogurt starter, and cover

                  4) Leave at warm temperature for over night.
 

 


 


Sweet Lassi

 

         Mix 1 part of yogurt into 5 parts of water


Ingredients

              ½ teaspoon cardamom powder

               1 teaspoon honey or organic sugar

               1 teaspoon rose water

               1 teaspoon pistachio and almonds crushed

 

                Mix all above ingredients with hand mixer.

                Garnish with crushed pistachio and almonds.
